CINNAMON, PINE NUT & CARDAMOM COOKIES

Keeps: 2 weeks at room temperature in an airtight tin, store when cold.

Makes: about 2 dozen biscuits

INGREDIENTS

30 g (1 oz) wholemeal flour
120 g (4 oz) self-raising flour
50 g (2 oz) light muscovado or soft brown sugar
1 tsp ground cardamom seeds
1 tsp ground cinnamon
120 g (4 oz) cold butter
 60 g (2 oz) pine nuts

Ground cardamom quickly loses its flavour, so if you can, buy whole pods, release the seeds by crushing the pods to open with a rolling or mortar and pestle, then grind the seeds as needed (store any extra in an airtight jar in the fridge).

If anyone is allergic to pine nuts, use sunflower seeds instead.

Preheat the oven to 180°C/Gas 4. Line 2 baking sheets with baking paper.

Put the flour, sugar and spices in the food processor. 

Cut the butter into 1 cm (1⁄2 ”) cubes, add to the flour mixture and process until the mixture begins to cling together in little balls, 30-45 seconds. Pulse in 2 tablespoons of the nuts. The dough should feel like play-doh.

Roll the pastry out on a large board until it’s about 7 mm  (¼ inch) thick. Scatter the pine nuts evenly over the top, then roll over the dough gently to press the nuts onto the top (this stops them from falling off once baked.).

Pop the pastry into the freezer for 15 minutes or in the fridge for 30 minutes to firm up (this makes the cookies easier to cut out and helps them hold their shape when baking).

Cut out your shapes from the dough and lay them on a the prepared baking sheets, then gather and re-roll the dough left over after cutting out the first batch (don’t worry if some of the pine nuts are now partly rolled into the dough itself rather than on top).

Bake for 15 minutes until the cookies are firm to touch, then take them out of the oven and leave to cool for 10 minutes before carefully transferring them to a cooling rack.
