Plumcake

Ingredients

Ingredients for a loaf tin for 6/8 people

4 fresh eggs weighing approx. 200 g

160 g sugar

250 g low-fat or whole yogurt

1 lemon

120 g seed oil

200 g plain flour

80 g starch

1 x 16 g sachet of baking powder

1 pinch of salt

1 pinch of bicarbonate of soda

Total weight: 1000 g

Preparation

Crack the eggs into a bowl, add the sugar and whisk until light and fluffy.

Gently mix in the yoghurt and drizzle in the seed oil slowly, add the lemon rind and continue mixing.

Sift in the flour with the baking powder and bicarbonate of soda, lastly add a pinch of salt and mix until the flour is completely absorbed and the mixture is uniform.

Butter the tin and dust with biscuit crumbs or flour.

Fill the tin with the cake mixture.

Select the "plum cake" automatic recipe from the oven menu, place in the oven and switch on.

There is no need to preheat the oven.

Chef's top tips

You can enrich the basic recipe with candied fruit, sultanas or nuts, without exaggerating with the amount.

If you like, you can make this mixture in two different colours, adding 40 g of cocoa powder to half of the cake mix.

When you take the cake out of the oven, carefully turn it out of the tin straight away, otherwise the heat of the tin will dry it out.
