Ingredients for a cake tin for 10/12 people
200 g butter at room temperature
240 g sugar
3 medium eggs
260 g sifted plain flour
240 g apples (2 peeled and cored apples)
50 g sultanas
100 g roughly chopped almonds
1 vanilla pod
Pinch of salt
16 g baking powder for cakes
Peel of 1 lemon
Icing sugar as required
Total weight: 1250/ 1300 g
Beat the butter and sugar together until light and fluffy.
Add the eggs one at a time, whisking into the mixture, then add the flour mixed with the baking powder, mix well and then add the diced apples, the vanilla seeds scraped from the pod, the almonds, sultanas and a pinch of salt.
Once the mixture is uniform, transfer to the cake tin, buttered and dusted with flour, or simply sprayed with non-stick cooking spray, if you have any.
Select the "apple pie" automatic recipe from the oven menu, place in the oven and switch on.
There is no need to preheat the oven.
When you remove the pie from the oven, wait 5 minutes for it to firm up, then turn it out onto a serving plate, dust with icing sugar and serve.
This cake can be served with a chocolate or red berry sauce and ice cream.
If you don't want to use baking powder, you can use cream of tartar instead, which is a natural raising agent, in this case use 8 g cream of tartar and 8 g bicarbonate of soda.
If you want your cake to rise as much as possible, add a good pinch of bicarbonate of soda.
If you want really good vanilla, bear in mind that the best pods are at least 20 cm long.
