Gnocchi Alla Romana

80 gr Butter

2 Egg yolks

80 gr Grana cheese

250 gr Milk

7 gr Nutmeg

400 gr Spelt flour

Salt and Pepper


Step 1

Boil the salted milk and sprinkle in the semolina, stirring continuously with a spoon.

Step 2

Leave to cook for around ten minutes, remove from the heat and, while still warm, add: the egg yolks, 1/3 of the butter, a handful of grated Grana Padano, nutmeg and a little pepper.

Step 3

Pour the mixture onto a damp work surface and create a layer approx. 1 cm thick; leave to cool then cut out discs with a glass.

Step 4

Butter an oven dish, arrange the discs in the dish and add the remaining butter in pieces. Cover the Grana Padano and place in the oven.
