50gr Cooked ham
45gr Dry white wine
100gr Fresh ricotta
50gr Grated Parmigiano-Reggiano cheese
100g Mixed minced meat
30gr Olive oil
50gr Pancetta (bacon)
40gr Red wine
100gr Tomato purée
300gr Zite (pasta)
Salt and pepper
Sage and Thyme
Add chopped garlic, half of the onion, bacon and ham to a pan and stir fry.
Add white wine and bring to a boil then add the tomato and let everything cook for about ten minutes.
In a separate pan fry rest of the finely sliced onion in very hot oil until glazed. Add minced meat, spices and red wine and stir from time to time.
When cooked, let it cool down and pour the mix into a bowl. Add Ricotta and egg and mix everything well.
Carefully stuff the Zite (pasta) with the mix from the first pan and then place them in a slightly buttered baking dish. Pour the meat sauce over the stuffed pasta and place in oven.
