Ingredients for 4 people
400 gr Artichokes
8 Eggs
100 gr Grated Parmigiano-Reggiano or Grana
2 Lemons
40 gr Olive oil
120 gr Shelled prawns
Salt and Pepper
Garlic
Parsley
Remove the outer leaves from the artichokes until the paler tender ones are revealed. Cut off the sharp tips and wash the artichokes. If the stalks are tender, remove the outer part and cut them off. Cut them into thin slices (removing the inner fur) and place them in a bowl of water and lemon, to prevent them from turning black.
Heat the oil and garlic in a frying pan and add the drained artichokes. Season with salt and pepper to taste and cook in a covered pan until soft. When cooked, add the chopped parsley; turn off the heat and leave to cool.
