Scorpion Fish In Sauce

Ingredients

80 gr Beans

80 gr Carrot

2 Eggs

25 gr Liquid cream

20 gr Olive oil

20 gr Onion

70 gr Pine nuts

80 gr Potatoes

120 gr Scampi

350 gr Scorpion fish

10 gr Vinegar

  Salt and Pepper

 

Preparation

Step 1

Oil an oven tray and lay the fish and sliced onion on it. Pour a little oil onto the surface of the fish and place in the oven.

Step 2

Meanwhile, prepare the sauce. Mix together the pine nuts, hard boiled egg yolks, cream and a little salt and pepper in the blender, to obtain a rather thick sauce.

Step 3

When the fish is cooked, remove from the oven dish and leave to cool. Divide the fish in half, remove the bones and the skin. On one half place the scampi, previously boiled and chopped, and half the pine nut sauce; cover with the other half of the fish and pour the rest of the sauce on the top.

Step 4

In a bowl, garnish the previously boiled vegetables with oil, salt, pepper and vinegar.
