50 gr Black olives
20 gr Carrot
20 gr Celery
30 gr Green pepper
4 John Dory fillets
100 gr Mushrooms
80 gr Onion
250 gr Ripe tomatoes
 Olive oil
 Parsley
 Salt and Pepper
Peel and slice the onions and spread them over the bottom of a greased dish large enough to hold the fish fillets side by side. Place a layer of pulped tomatoes (setting a couple of tomatoes aside) on top of the onion, sprinkle with salt and pepper and then place the fish fillets on the top. Grease with a tablespoon of oil and place in the oven.
In the meantime clean, wash and finely chop the carrot, celery, onion and remaining tomatoes, the green pepper, mushrooms, parsley and olives.
