John Dory All'Isolana

50 gr Black olives

20 gr Carrot

20 gr Celery

30 gr Green pepper

4 John Dory fillets

100 gr Mushrooms

80 gr Onion

250 gr Ripe tomatoes

  Olive oil


  Salt and Pepper


Step 1

Peel and slice the onions and spread them over the bottom of a greased dish large enough to hold the fish fillets side by side. Place a layer of pulped tomatoes (setting a couple of tomatoes aside) on top of the onion, sprinkle with salt and pepper and then place the fish fillets on the top. Grease with a tablespoon of oil and place in the oven.

Step 2

In the meantime clean, wash and finely chop the carrot, celery, onion and remaining tomatoes, the green pepper, mushrooms, parsley and olives.

Step 3

When the fish is cooked, remove the dish from the oven and cover the fillets with the prepared vegetable mixture.
