Gilthead En Papillote

Ingredients

4 Cherry tomatoes

4 Medium sized giltheads

800 gr New potatoes

1 Shallots

Fennel flower

  Olive oil

  Peppercorns

  Salt

Preparation

Step 1

Place a gilthead on a large sheet of baking paper and surround with peeled and cooked new potatoes and cherry tomatoes.

Step 2

Season with salt, then place a few peppercorns and a little fennel inside the fish.

Step 3

Drizzle with a tablespoon of oil and seal the oven paper well. Repeat for all the other gilthead. Lay them all in an oven dish and place in the oven.
