Pear And Coconut Cake

Ingredients for 4 people

40 gr Breadcumbs

80 gr Butter

3 Eggs

80 gr Flour

1 Lemon zest

400 gr Pears

80 gr Potato starch

1 sachet Raising flour

160 gr Sugar

1 sachet Vanillin

Dessicated coconut



Step 1

Divide the pears into quarters, remove the core and dice finely.

Step 2

Dice the butter and melt in a small saucepan.

Step 3

Mix the eggs and sugar in a large bowl, then keep stirring as you carefully blend in the slightly warm melted butter, the flour, potato starch, dessicated coconut (leave two tablespoons to one side), the raising flour and vanillin, grated lemon zest, a pinch of salt and finally the pears.

Step 4

Butter and breadcrumb a 24 cm diameter dish then pour in the mixture; smooth over the surface and sprinkle over the remaining coconut; place in the oven.

Step 5

Leave to cool before serving.
