Margherita Sponge Cake

60 gr Butter

3 Eggs

400 gr Flour

45 gr Icing sugar

20 gr Olive oil

1 sachet Raising agent

120 gr Sugar

1 sachet Vanillin

  Lemon zest



Step 1

Whisk the egg yolk and add half the sugar with the vanillin, continuing until the mixture becomes creamy. Add the salt.

Step 2

Whisk the egg whites and beat in the rest of the sugar a little at a time.

Step 3

Combine the egg whites and the yolk mixture and sift in the flour mixed with the raising agent.

Step 4

Gently fold it into the egg yolk mix, adding the softened butter and olive oil. Add some lemon zest to taste. Pour the mixture into a buttered cake tin and place in the oven.
