60 gr Butter
400 gr Flour
45 gr Icing sugar
20 gr Olive oil
1 sachet Raising agent
120 gr Sugar
1 sachet Vanilla
Whisk the egg yolk and add half the sugar with the vanilla, continuing until the mixture becomes creamy. Add the salt.
Whisk the egg whites and beat in the rest of the sugar a little at a time.
Combine the egg whites and the yolk mixture and sift in the flour mixed with the raising agent.
Gently fold it into the egg yolk mix, adding the softened butter and olive oil. Add some lemon zest to taste. Pour the mixture into a buttered cake tin and place in the oven.
